Confetti Rice
(Makes 4 servings)
Ingredients
- 2 teaspoons vegetable oil
- 12 mushrooms, sliced
- 2 garlic cloves, minced (2 tsp)
- 2 carrots, peeled and sliced (1 cup)
- Black pepper, to taste
- 1 cup chicken broth
- 1 cup uncooked rice
- 1/2 cup peas
Directions
- In a large frying pan, heat oil over medium heat.
- Add mushrooms and garlic. Cook for 3 minutes, stirring often.
- Stir in carrots, black pepper, chicken broth, 1 cup water, and rice.
- Cover, reduce heat to low, and simmer for 20 minutes, until rice is cooked.
- Stir in peas. Cover and let sit for 5 minutes. Refrigerate leftovers.
Mushroom Tips
- For the best buy, choose mushrooms that look smooth and dry.
- To prepare fresh mushrooms, rinse under running water. Pat dry with a paper towel if desired. Trim off rough ends of stems.
- To store fresh mushrooms, place them in a paper bag and refrigerate for up to 5 days.
- Mushrooms contain potassium, which is good for a healthy heart.
- Mushrooms are Chester County's top crop and are grown in indoor mushroom houses year-round.
Strawberry S'mores
(Makes 1 servings)
Ingredients
- 2 strawberries
- 1 graham cracker (broken in half)
- 2 tablespoons of vanilla yogurt
Directions
- Wash hands with soap and water.
- Rinse the strawberries in water.
- Slice the strawberries.
- Add the yogurt and strawberries to 1/2 of graham cracker.
- Top with the other 1/2 of graham cracker.
- Enjoy immediately.
Strawberry Tips
- Pick the berries after the plants have dried in the morning and keep the picked berries out of direct sunlight.
- Pick when the berries are fully colored, retaining the caps.
- Refrigerate the strawberries as soon as possible.
- Do not wash the berries until just prior to use.
- Strawberries are loaded with vitamin C. Eight strawberries contain 160% of your daily recommended amount.
